  • tamarind paste1 tablespoon tamarind paste

  • lime1 lime

Instructions

  1. Soak the rice noodles in warm water.
  2. Slice the chicken into thin strips.
  3. Beat the eggs in a bowl.
  4. Chop the garlic and green onions.
  5. Mix fish sauce, tamarind paste, and sugar in a bowl.
  6. Stir-fry the chicken and garlic until cooked.
  7. Add the eggs and stir until scrambled.
  8. Add the noodles and sauce, stir-fry for 2 minutes.
  9. Add the bean sprouts and green onions, stir-fry for 1 minute.
  10. Serve with crushed peanuts and a lime wedge.

This recipe serves 2. For a vegetarian version, replace the chicken with tofu and use soy sauce instead of fish sauce.
